  • 1. Please give an overview of your role and what this involves on a day-to-day basis:
  • As a Chef De Partie my job is to look after a section, in this instance I work across starters and desserts, my main responsibilities are to make sure we have plenty of stock to last throughout the service, making sure it it rotated correctly and nothing is out of date or unsuitable for use, making sure the plates sent out are served to the specifications supplied. Also other things are making sure we are having as small amount of wastage as possible. Making sure my section is kept clean at all times so we do not attract pests or cause cross contamination.

  • 2. Have you learnt any new skills or developed existing skills?
  • I have developed new skills, some are due to working with new Ingredients such as scallops, before working here I had not cooked a scallop but I now am able to cook one well, making variations on purées is a new skill and having the understanding of each purée is different and how to make sure each way is made correctly l

  • 3. To what extent do you enjoy your programme?
  • I have completed a previous apprenticeship before but I have enjoyed this more, not only the working side but the computer side too, the courses are set out in an easier layout so I can understand them better and that helps me to complete them to a higher satisfaction level

  • 4. How well organised/structured is your programme?
  • As stated before the layout that is set is an easy layout, I have set days that my apprenticeship teacher comes out to see me and they are helpful when the new courses come up and being 1-1 you can get the help straight away, also the messaging system helps too as I can message my assessor directly via that.

  • 8. Are there extra-curricular activities to get involved in at your work? (For example, any social activities, sports teams, or even professional networking events.)
  • From my knowledge there is a yearly football tournament that takes place, apart from that’s the only social events would be our staff Christmas party which included a scavenger hunt around the city centre as set teams within the front of house and back of house, then a meal with all the team together
