  • 1. Please give an overview of your role and what this involves on a day-to-day basis:
  • I am an apprentice butcher, and my role is to learn about all the different cuts of the meat and how to break them down by muscle and specific orders. This involves me following the instructions of my mentors so that I can take the cuts of pork from a full cut down to all the separate parts. These include shoulders, legs, belly’s and middles.
